Day 11: Holiday Cheer - Cooking with Rooforia

Beef Short Ribs

Ingredients:

Short Rib - 2lbs

Red Wine - about 600mL

Tomato Paste - 2 tbsp

Garlic - 4 cloves

Beef Stock - half a carton

Parsley

Red potatoes

Baby carrots

Short Ribs:

Rub short ribs with olive oil

Season with salt and pepper

Sear on all sides in cast iron skillet.

Add garlic cloves and tomato paste

Add in red wine

Reduce for about 10 - 15 minutes

Add in beef stock

Reduce for about 5 minutes

Cover in foil

Place in a 350 degree oven for 2 - 2.5 hours


Carrots:

Toss in a bowl with olive oil, salt, pepper, and garlic powder

Spread out on foil lined baking sheet

Roast in a 350 degree oven for 40 - 45 minutes

Potatoes:

Slice red potatoes into ¼ inch slices

Toss in a bowl with olive oil, salt, pepper, garlic powder, chopped parsley (an italian seasoning is good too)

Spread out in foil lined baking sheet

Roast in a 350 oven for 45 - 50 minutes
